Description

Soft, moist, perfectly spiced bars topped with tangy cream cheese frosting—straight-up cozy, bakery-style comfort.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and set aside.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat sugar, oil, and eggs until smooth. Gradually mix in dry ingredients until just combined.
  4. Fold in grated carrots and walnuts (if using). Spread batter evenly into prepared pan.
  5. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let cool completely in pan.
  6. For frosting, beat cream cheese and butter until creamy. Add powdered sugar and vanilla, beating until smooth. Spread over cooled bars before cutting into squares.
