Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 cup canned pumpkin puree
- 3/4 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, mix pumpkin puree, granulated sugar, oil, eggs, and 1 teaspoon vanilla until smooth.
- Gradually stir dry ingredients into wet ingredients until just combined.
- Pour batter into prepared pan and bake for 25-30 minutes, until a toothpick inserted comes out clean. Let cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and 1/2 teaspoon vanilla, beating until creamy. Spread over cooled bars.
