Description

Soft, moist, perfectly spiced bars topped with tangy cream cheese frosting—pure cozy, bakery-style comfort.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup canned pumpkin puree
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, oil, eggs, and 1 teaspoon vanilla until smooth.
  4. Gradually stir dry ingredients into wet ingredients until just combined.
  5. Pour batter into prepared pan and bake for 25-30 minutes, until a toothpick inserted comes out clean. Let cool completely.
  6. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and 1/2 teaspoon vanilla, beating until creamy. Spread over cooled bars.
