Description
A festive twist on classic stuffing, these savory turkey-stuffed balls are seasoned with herbs and studded with tart cranberries, then baked until golden. Perfect as a holiday side or appetizer.
Ingredients
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 2 cloves garlic, minced
- 1 pound ground turkey
- 3 cups day-old bread cubes (about 6 slices)
- 1/2 cup dried cranberries
- 1/2 teaspoon dried sage
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large egg, lightly beaten
- 1/2 cup chicken broth (or turkey broth)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add onion and celery, cook until softened, about 5 minutes. Add garlic and cook for 1 more minute. Remove from heat and let cool slightly.
- In a large bowl, combine ground turkey, bread cubes, dried cranberries, sage, thyme, salt, pepper, egg, and the cooked onion-celery mixture. Pour in the broth and mix until well combined. Let stand for 10 minutes so bread absorbs liquid.
- Shape the mixture into 12 equal balls, about 2 inches in diameter, packing them firmly.
- Place the balls on the prepared baking sheet. Bake for 25-30 minutes, until golden and internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving. Great with extra cranberry sauce or gravy.
Notes
You can customize the seasonings to taste. For a crunchier exterior, broil for the last 2 minutes.
