Juicy chicken breasts stuffed with a savory mixture of spinach, dried cranberries, and Parmesan cheese, then baked to golden perfection. A festive and flavorful meal that’s surprisingly easy to prepare.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 cups fresh spinach, roughly chopped
- 1/2 cup dried cranberries
- 1/2 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 1/2 cup chicken broth
- 1 tablespoon butter
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant.
- Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine cooked spinach, dried cranberries, Parmesan cheese, ricotta cheese, salt, pepper, and Italian seasoning.
- Slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each breast with an equal portion of the spinach mixture. Secure with toothpicks if needed.
- Season the outside of the chicken breasts with additional salt and pepper if desired.
- Place the stuffed chicken breasts in a baking dish. Pour chicken broth around the chicken and dot with butter.
- Bake for 25-30 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Let rest for 5 minutes before serving. Remove toothpicks and spoon pan juices over the top.
