Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 5 oz fresh spinach, roughly chopped
- 1/2 cup dried cranberries
- 4 oz goat cheese, softened
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add shallot and garlic, cook until softened, about 2 minutes. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the spinach mixture, dried cranberries, goat cheese, thyme, salt, and pepper. Mix well.
- Cut a pocket into each chicken breast horizontally, being careful not to cut all the way through. Stuff each breast evenly with the spinach mixture and secure with toothpicks if needed.
- Place stuffed chicken breasts in a baking dish. Pour chicken broth around the chicken.
- Bake for 25-30 minutes, or until chicken is cooked through (internal temperature reaches 165°F). Let rest for 5 minutes before serving.
Notes
You can customize the seasonings to taste. Add a pinch of red pepper flakes for a little heat, or swap the dried cranberries for dried cherries.
