Description

Juicy chicken breasts stuffed with a savory mixture of spinach, tart cranberries, and creamy goat cheese, then baked to golden perfection. This elegant yet easy dish is perfect for a weeknight dinner or a special occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 5 oz fresh spinach, roughly chopped
  • 1/2 cup dried cranberries
  • 4 oz goat cheese, softened
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add shallot and garlic, cook until softened, about 2 minutes. Add spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. In a bowl, combine the spinach mixture, dried cranberries, goat cheese, thyme, salt, and pepper. Mix well.
  4. Cut a pocket into each chicken breast horizontally, being careful not to cut all the way through. Stuff each breast evenly with the spinach mixture and secure with toothpicks if needed.
  5. Place stuffed chicken breasts in a baking dish. Pour chicken broth around the chicken.
  6. Bake for 25-30 minutes, or until chicken is cooked through (internal temperature reaches 165°F). Let rest for 5 minutes before serving.

Notes

You can customize the seasonings to taste. Add a pinch of red pepper flakes for a little heat, or swap the dried cranberries for dried cherries.
