Description

Creamy goat cheese truffles rolled in crunchy pistachios and sweet-tart cranberries, served warm with a spicy honey drizzle. An elegant appetizer that balances rich, tangy, and sweet heat.

Ingredients

  • 8 oz goat cheese, softened
  • 1/4 cup dried cranberries, finely chopped
  • 1/4 cup shelled pistachios, finely chopped
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix goat cheese, half the chopped cranberries, and a pinch of salt until well combined.
  3. Roll mixture into 12 small balls (about 1 inch each).
  4. In a small bowl, combine chopped pistachios and remaining cranberries. Roll each cheese ball in the mixture to coat.
  5. Place coated truffles on a parchment-lined baking sheet and bake for 8-10 minutes, until warmed through.
  6. Meanwhile, in a small saucepan, warm honey, red pepper flakes, and olive oil over low heat for 2-3 minutes.
  7. Drizzle hot honey over warm truffles and serve immediately.

Notes

You can customize the seasonings to taste. Adjust red pepper flakes for more or less heat.
