Description

A colorful and flavorful appetizer perfect for holiday gatherings, these tortilla pinwheels combine creamy feta, tart cranberries, and fresh spinach for a delightful bite-sized treat.

Ingredients

  • 4 large flour tortillas (10-inch)
  • 8 ounces cream cheese, softened
  • 1 cup crumbled feta cheese
  • 1 cup dried cranberries
  • 2 cups fresh spinach leaves, stems removed
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped pecans (optional)

Instructions

  1. In a medium bowl, mix the softened cream cheese, feta cheese, garlic powder, and black pepper until well combined.
  2. Lay a tortilla flat on a clean surface. Spread a quarter of the cream cheese mixture evenly over the tortilla, leaving a 1/2-inch border around the edges.
  3. Sprinkle a quarter of the dried cranberries, spinach leaves, green onions, and pecans (if using) over the cream cheese layer.
  4. Starting from one edge, roll the tortilla tightly into a log. Repeat with the remaining tortillas and filling.
  5. Wrap each roll in plastic wrap and refrigerate for at least 1 hour to firm up.
  6. Using a sharp knife, slice each roll into 1-inch pinwheels. Arrange on a serving platter and serve chilled.

Notes

You can customize the seasonings to taste. For a dairy-free version, use vegan cream cheese and omit feta. These pinwheels can be made up to 24 hours in advance and stored in the refrigerator.
