Description

A comforting and healthy dinner: roasted sweet potato halves filled with seasoned ground turkey and creamy cottage cheese, topped with a zesty taco-inspired blend. Perfect for a cozy weeknight meal.


Ingredients

  • 4 medium sweet potatoes, scrubbed
  • 1 tablespoon olive oil
  • 1 lb lean ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Salsa or hot sauce, for serving


Instructions

  1. Preheat oven to 400°F (200°C). Prick sweet potatoes with a fork and rub with olive oil. Place on a baking sheet and roast for 40-45 minutes, or until tender. Let cool slightly.
  2. While sweet potatoes roast, heat a large skillet over medium heat. Add ground turkey and cook, breaking it apart, until browned. Add onion and garlic, and cook until softened. Stir in taco seasoning, chili powder, cumin, salt, and pepper. Cook for 2-3 minutes more.
  3. When sweet potatoes are cool enough to handle, cut them in half lengthwise. Scoop out some of the flesh to create a boat, leaving a 1/2-inch border. Reserve the scooped flesh for another use or mash and mix into the turkey.
  4. Fill each sweet potato boat with the turkey mixture. Top with cottage cheese and shredded cheddar if using.
  5. Return to the oven and bake for 10-15 minutes, until heated through and cheese is melted.
  6. Garnish with fresh cilantro and serve with lime wedges and salsa or hot sauce. Enjoy!

Notes

You can customize the seasonings to taste. For a spicier kick, add a diced jalapeño with the onion. Use Greek yogurt instead of cottage cheese if preferred.
