Description

A light and fluffy crustless quiche packed with protein-rich cottage cheese and nutritious spinach. Perfect for a quick breakfast, brunch, or light dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, cook until softened, about 3 minutes.
  3. Add spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly. Squeeze out excess liquid.
  4. In a large bowl, whisk eggs. Add cottage cheese, mozzarella, Parmesan, salt, pepper, and red pepper flakes if using. Mix well.
  5. Fold in the cooked spinach mixture until evenly distributed.
  6. Pour the mixture into the prepared pie dish. Bake for 25-30 minutes, until the center is set and the top is lightly golden.
  7. Let cool for 5 minutes before slicing. Serve warm or at room temperature.

Notes

You can customize the seasonings to taste. Add chopped herbs like dill or chives for extra flavor. Leftovers can be refrigerated for up to 3 days.
