Description

A light and fluffy crustless quiche packed with creamy cottage cheese, fresh spinach, and savory seasonings. Perfect for a quick breakfast, brunch, or a healthy dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach, roughly chopped
  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon dried thyme


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or a similar sized baking dish with cooking spray or olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the chopped spinach to the skillet and cook, stirring, until it has wilted and any excess liquid has evaporated, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a large bowl, whisk the eggs until well beaten. Add the cottage cheese, mozzarella, Parmesan, salt, black pepper, red pepper flakes (if using), and thyme. Mix well to combine.
  5. Stir the cooked spinach mixture into the egg mixture until evenly distributed.
  6. Pour the mixture into the prepared pie dish. Smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until the quiche is set in the center and the top is lightly golden. A knife inserted into the center should come out clean.
  8. Let the quiche cool for about 10 minutes before slicing and serving. Enjoy warm or at room temperature.

Notes

You can customize the seasonings to taste. Add a pinch of nutmeg for extra warmth or top with cherry tomatoes before baking. This quiche stores well in the refrigerator for up to 3 days.
