Description

A light and fluffy crustless quiche packed with protein-rich cottage cheese and nutritious spinach. Perfect for a quick breakfast, brunch, or even a light dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 6 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or similar baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic; sauté until softened, about 3 minutes.
  3. Add spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly. Squeeze out excess moisture.
  4. In a large bowl, whisk eggs. Add cottage cheese, mozzarella, Parmesan, salt, pepper, and oregano. Mix well.
  5. Fold in the cooked spinach mixture.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
  8. Let cool for 10 minutes before slicing and serving.

Notes

You can customize the seasonings to taste. Add cooked bacon or mushrooms for extra flavor. For a dairy-free version, use vegan cheese and tofu instead of cottage cheese.
