Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 (8 oz) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/4 cup all-purpose flour
Instructions
- Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl until combined. Press firmly into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth and creamy. Blend in sour cream and vanilla extract.
- Add eggs one at a time, mixing just until combined after each. Gently fold in flour until incorporated.
- Pour filling over the crust in the springform pan. Smooth the top with a spatula.
- Bake for 55-65 minutes until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
- Remove from oven, cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
