Description

Soft, bakery-style cinnamon-spiced muffins with a surprise creamy cream cheese center, offering warm comfort in every bite.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for filling)


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
  2. In a bowl, whisk flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, mix milk, oil, egg, and vanilla. Combine wet and dry ingredients until just blended.
  3. For filling, beat cream cheese, powdered sugar, and vanilla until smooth. Spoon muffin batter into cups halfway, add 1 tsp cream cheese mixture, then top with more batter to cover.
  4. Bake for 18-22 minutes until golden and a toothpick inserted near the edge comes out clean. Cool in pan for 5 minutes, then transfer to a rack.
