Soft, bakery-style cinnamon-spiced muffins with a surprise creamy cream cheese center, offering warm comfort in every bite.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract (for filling)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- In a bowl, whisk flour, sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, mix milk, oil, egg, and vanilla. Combine wet and dry ingredients until just blended.
- For filling, beat cream cheese, powdered sugar, and vanilla until smooth. Spoon muffin batter into cups halfway, add 1 tsp cream cheese mixture, then top with more batter to cover.
- Bake for 18-22 minutes until golden and a toothpick inserted near the edge comes out clean. Cool in pan for 5 minutes, then transfer to a rack.
