Description

Moist and fluffy muffins bursting with cinnamon and apple flavor, made with applesauce for a healthier twist.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened applesauce
  • 1/4 cup milk


Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, whisk melted butter and brown sugar until well combined. Whisk in egg, vanilla, applesauce, and milk.
  4. Add dry ingredients to wet ingredients and stir until just combined. Do not overmix.
  5. Divide batter evenly among muffin cups, filling each about 3/4 full.
  6. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

You can customize the seasonings to taste. Add a streusel topping or extra cinnamon sugar for a crunchy finish.
