Rich, fudgy brownies swirled with a refreshing mint layer and topped with a glossy chocolate glaze for an irresistible dessert.
Ingredients
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1/2 tsp salt
- 1/2 cup chocolate chips
- 1/2 cup mint chocolate chips, melted
- 1/4 cup heavy cream
- 1 cup powdered sugar
- 1/2 tsp peppermint extract
- Green food coloring (optional)
- 1/2 cup semi-sweet chocolate, chopped
- 2 tbsp butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
- In a large bowl, whisk melted butter and granulated sugar until combined. Beat in eggs one at a time, then stir in vanilla extract.
- Sift in flour, cocoa powder, and salt. Fold gently until just combined, then stir in chocolate chips. Pour batter into prepared pan and spread evenly.
- Bake for 25-30 minutes until a toothpick inserted comes out with moist crumbs. Let cool completely in pan.
- For mint layer, whisk melted mint chocolate chips, heavy cream, powdered sugar, and peppermint extract until smooth. Add green food coloring if desired. Spread evenly over cooled brownies.
- For glaze, melt semi-sweet chocolate and butter in a double boiler until smooth. Drizzle over mint layer. Chill for 1 hour before cutting into squares.
