Description

Rich, fudgy brownies swirled with a refreshing mint layer and topped with a glossy chocolate glaze for an irresistible dessert.


Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup mint chocolate chips, melted
  • 1/4 cup heavy cream
  • 1 cup powdered sugar
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • 1/2 cup semi-sweet chocolate, chopped
  • 2 tbsp butter


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
  2. In a large bowl, whisk melted butter and granulated sugar until combined. Beat in eggs one at a time, then stir in vanilla extract.
  3. Sift in flour, cocoa powder, and salt. Fold gently until just combined, then stir in chocolate chips. Pour batter into prepared pan and spread evenly.
  4. Bake for 25-30 minutes until a toothpick inserted comes out with moist crumbs. Let cool completely in pan.
  5. For mint layer, whisk melted mint chocolate chips, heavy cream, powdered sugar, and peppermint extract until smooth. Add green food coloring if desired. Spread evenly over cooled brownies.
  6. For glaze, melt semi-sweet chocolate and butter in a double boiler until smooth. Drizzle over mint layer. Chill for 1 hour before cutting into squares.
