Description

A quick and easy taco recipe with seasoned ground beef, diced tomatoes and green chilies (Rotel), and melted cheese, all served in crispy taco shells.


Ingredients

  • 1 lb ground beef
  • 1 can Rotel diced tomatoes and green chilies (10 oz)
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 8 taco shells (hard or soft)
  • 1/4 cup water
  • Optional toppings: diced onion, lettuce, tomato, sour cream


Instructions

  1. In a large skillet over medium-high heat, brown the ground beef until fully cooked, breaking it into crumbles.
  2. Drain excess grease, then add Rotel, taco seasoning, and water. Stir to combine.
  3. Bring to a simmer and cook for 5-7 minutes until slightly thickened.
  4. Heat taco shells according to package directions.
  5. Spoon the beef mixture into taco shells and top generously with shredded cheddar cheese.
  6. Add any additional toppings as desired and serve immediately.

Notes

You can customize the seasonings to taste. For extra spice, use a hot Rotel or add diced jalapeños.
