Description

A quick and flavorful one-pan dish featuring cheese ravioli tossed with sautéed spinach, mushrooms, and sun-dried tomatoes in a creamy garlic sauce.


Ingredients

  • 1 package (20 oz) refrigerated cheese ravioli
  • 2 tablespoons olive oil
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 3 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Cook ravioli according to package directions; drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat. Add mushrooms and cook until golden, about 5 minutes.
  3. Add garlic and sun-dried tomatoes; cook for 1 minute until fragrant.
  4. Add spinach and cook until wilted, about 2 minutes.
  5. Stir in heavy cream and Parmesan cheese. Simmer for 2 minutes until sauce thickens slightly.
  6. Add cooked ravioli to the skillet and gently toss to coat. Season with salt and pepper. Serve immediately.
