Description
A delicious and easy no-crust quiche loaded with tender potatoes, fresh spinach, and plenty of melted cheese. Perfect for breakfast, brunch, or a light dinner.
Ingredients
- 2 medium potatoes, thinly sliced
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups fresh spinach
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
- Heat olive oil in a skillet over medium heat. Add potatoes and cook until tender and lightly browned, about 8-10 minutes. Add onion and garlic, cook for 2 more minutes.
- Add spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, milk, salt, pepper, and nutmeg. Stir in shredded cheddar and mozzarella.
- Spread the potato-spinach mixture evenly in the prepared pie dish. Pour the egg mixture over the top.
- Bake for 30-35 minutes, or until the quiche is set and the top is golden brown. Let cool for 5 minutes before slicing.
Notes
You can customize the seasonings to taste. Add cooked bacon or ham for extra protein.
