Description
A delightful salad that combines sweet caramelized pears with tangy blue cheese, crunchy walnuts, and a light vinaigrette.
Ingredients
- 2 ripe but firm pears, sliced
- 2 tablespoons butter
- 1 tablespoon brown sugar
- 6 cups mixed salad greens
- 1/2 cup crumbled blue cheese
- 1/3 cup toasted walnuts, chopped
- 1/4 cup dried cranberries
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, melt butter and add brown sugar. Stir until sugar dissolves.
- Add pear slices in a single layer and cook for 2-3 minutes per side until golden and caramelized. Transfer to a plate to cool slightly.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
- In a large salad bowl, combine mixed greens, blue cheese, walnuts, and dried cranberries.
- Top with caramelized pear slices and drizzle with vinaigrette. Toss gently to combine and serve immediately.
Notes
You can customize the seasonings to taste. For a vegan version, use coconut oil instead of butter and omit the blue cheese or substitute with a vegan alternative.
