Description

A delightful salad that combines sweet caramelized pears with tangy blue cheese, crunchy walnuts, and a light vinaigrette.


Ingredients

  • 2 ripe but firm pears, sliced
  • 2 tablespoons butter
  • 1 tablespoon brown sugar
  • 6 cups mixed salad greens
  • 1/2 cup crumbled blue cheese
  • 1/3 cup toasted walnuts, chopped
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste


Instructions

  1. In a large skillet over medium heat, melt butter and add brown sugar. Stir until sugar dissolves.
  2. Add pear slices in a single layer and cook for 2-3 minutes per side until golden and caramelized. Transfer to a plate to cool slightly.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
  4. In a large salad bowl, combine mixed greens, blue cheese, walnuts, and dried cranberries.
  5. Top with caramelized pear slices and drizzle with vinaigrette. Toss gently to combine and serve immediately.

Notes

You can customize the seasonings to taste. For a vegan version, use coconut oil instead of butter and omit the blue cheese or substitute with a vegan alternative.
