Description

A delightful combination of sweet caramelized pears, tangy blue cheese, and crisp greens, all brought together with a tangy balsamic vinaigrette. This salad is perfect as a starter or a light main course.


Ingredients

  • 4 ripe but firm pears
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 6 cups mixed salad greens
  • 4 ounces blue cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Core the pears and slice them into wedges or thick slices.
  2. In a large skillet over medium heat, melt the butter and brown sugar until bubbly. Add the pear slices and cook for about 3-4 minutes per side, until caramelized and golden. Remove from heat and let cool slightly.
  3. In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, minced garlic, salt, and pepper to make the vinaigrette.
  4. In a large salad bowl, combine the mixed greens, toasted walnuts, and crumbled blue cheese.
  5. Add the caramelized pears on top of the salad.
  6. Drizzle the vinaigrette over the salad and toss gently to coat. Serve immediately.

Notes

You can customize the seasonings to taste. For a sweeter vinaigrette, add a teaspoon of honey or maple syrup.
