Description

These caramelized Brussels sprouts are roasted until golden and crispy, then tossed with creamy feta, crunchy walnuts, and a spicy-sweet hot honey drizzle. A perfect side dish that balances savory, tangy, and sweet.

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped walnuts
  • 3 tablespoons honey
  • 1 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 tablespoon apple cider vinegar (optional)
  • 1 tablespoon butter (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper. Spread them in a single layer on the baking sheet.
  3. Roast for 20-25 minutes, flipping halfway, until Brussels sprouts are caramelized and crispy on the edges.
  4. While sprouts roast, prepare the hot honey: In a small saucepan over low heat, combine honey, red pepper flakes, and apple cider vinegar (if using). Warm gently for 2-3 minutes until the pepper flakes infuse. Remove from heat.
  5. In a dry skillet over medium heat, toast the walnuts for 2-3 minutes until fragrant, stirring frequently. Remove from heat.
  6. Transfer roasted Brussels sprouts to a serving platter. Sprinkle with feta and walnuts. Drizzle with the hot honey mixture. Optionally, add a pat of butter on top while hot. Serve immediately.

Notes

You can customize the seasonings to taste. Adjust the hot honey to your preferred spice level by adding more or fewer red pepper flakes. For extra tang, add a squeeze of lemon juice before serving.
