A decadent fusion of rich chocolate cheesecake, buttery caramel, and toasted pecans, all nestled on a crunchy chocolate crust. This indulgent dessert is perfect for special occasions and chocolate lovers alike.
Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup pecans, chopped and toasted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup semisweet chocolate chips, melted and cooled
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup caramel sauce, plus more for drizzling
- 1/4 cup heavy cream
- 1/2 cup chopped pecans for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine chocolate cookie crumbs and melted butter. Press firmly into the bottom of the prepared pan. Sprinkle toasted pecans over the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in melted chocolate, sour cream, and vanilla extract until fully combined.
- Pour half of the cheesecake filling over the crust. Drizzle with 1/4 cup caramel sauce. Pour remaining filling over, spreading evenly.
- Place the pan on a baking sheet. Bake for 55-65 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake in the oven with the door ajar for 1 hour.
- Remove from oven and cool completely. Refrigerate for at least 6 hours or overnight.
- Before serving, heat remaining 1/4 cup caramel sauce with heavy cream in a small saucepan over low heat until smooth. Drizzle over the cheesecake and sprinkle with chopped pecans.
