Description
Tender zucchini slices are rolled around a creamy burrata and herb filling, then baked with a sweet and tangy tomato glaze. A beautiful and delicious vegetarian main or side dish.
Ingredients
- 2 large zucchini, sliced lengthwise into 1/4-inch thick strips
- 1 tablespoon olive oil, plus more for brushing
- 8 oz burrata cheese, at room temperature
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup tomato sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C). Brush zucchini slices with olive oil and season with salt and pepper.
- In a bowl, mix burrata, Parmesan, basil, garlic, salt, and pepper until well combined.
- Place a spoonful of the burrata mixture onto each zucchini slice and roll up tightly. Place rolls seam-side down in a baking dish.
- In a small bowl, whisk together tomato sauce, balsamic vinegar, honey, and red pepper flakes. Pour over the zucchini rolls.
- Bake for 25-30 minutes, until bubbly and zucchini is tender. Let rest for 5 minutes before serving.
- Garnish with extra basil if desired and serve.
Notes
You can customize the seasonings to taste. For a richer flavor, sprinkle with extra Parmesan before baking.
