Description

A hearty and comforting sweet potato boat topped with creamy burrata, seasoned ground turkey, and fresh arugula for a high-protein, satisfying meal.


Ingredients

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb lean ground turkey
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup baby arugula
  • 4 oz burrata cheese
  • 2 tbsp balsamic glaze
  • Fresh basil for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, rub with olive oil, salt, and pepper. Place on a baking sheet and roast for 45-50 minutes until tender.
  2. While potatoes roast, heat a skillet over medium heat. Add ground turkey, smoked paprika, garlic powder, and onion powder. Cook, breaking up meat, until browned and cooked through (about 8 minutes). Set aside.
  3. Once sweet potatoes are cool enough to handle, slice each in half lengthwise. Fluff the flesh with a fork, creating a well.
  4. Fill each sweet potato half with cooked turkey, then top with a handful of arugula. Tear burrata into pieces and distribute over the arugula.
  5. Drizzle with balsamic glaze and garnish with fresh basil. Serve warm.

Notes

You can customize the seasonings to taste. For extra crunch, add toasted pine nuts or pumpkin seeds.
