A hearty and comforting sweet potato boat topped with creamy burrata, seasoned ground turkey, and fresh arugula for a high-protein, satisfying meal.
Ingredients
- 2 large sweet potatoes
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb lean ground turkey
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup baby arugula
- 4 oz burrata cheese
- 2 tbsp balsamic glaze
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork, rub with olive oil, salt, and pepper. Place on a baking sheet and roast for 45-50 minutes until tender.
- While potatoes roast, heat a skillet over medium heat. Add ground turkey, smoked paprika, garlic powder, and onion powder. Cook, breaking up meat, until browned and cooked through (about 8 minutes). Set aside.
- Once sweet potatoes are cool enough to handle, slice each in half lengthwise. Fluff the flesh with a fork, creating a well.
- Fill each sweet potato half with cooked turkey, then top with a handful of arugula. Tear burrata into pieces and distribute over the arugula.
- Drizzle with balsamic glaze and garnish with fresh basil. Serve warm.
Notes
You can customize the seasonings to taste. For extra crunch, add toasted pine nuts or pumpkin seeds.
