A fresh and creamy twist on classic bruschetta, featuring creamy burrata cheese, ripe tomatoes, fragrant basil, and crusty grilled bread.
Ingredients
- 1 baguette, sliced into 1/2-inch thick rounds
- 3 tablespoons olive oil, divided
- 2 cloves garlic, peeled and halved
- 4 ripe tomatoes, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil leaves, thinly sliced plus extra for garnish
- 8 ounces burrata cheese, at room temperature
- 1 tablespoon balsamic glaze
- Flaky sea salt for finishing
Instructions
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet. Brush both sides with 2 tablespoons olive oil. Toast for 8-10 minutes until golden and crisp. Rub each slice with cut garlic.
- In a medium bowl, combine diced tomatoes with remaining 1 tablespoon olive oil, salt, pepper, and sliced basil. Let sit for 10 minutes to release juices.
- Place a generous piece of burrata on each toasted baguette slice. Spoon tomato mixture over the burrata.
- Drizzle with balsamic glaze and sprinkle with flaky sea salt and extra basil leaves. Serve immediately.
Notes
You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon juice.
