Description

A fresh and creamy twist on classic bruschetta, featuring creamy burrata cheese, ripe tomatoes, fragrant basil, and crusty grilled bread.


Ingredients

  • 1 baguette, sliced into 1/2-inch thick rounds
  • 3 tablespoons olive oil, divided
  • 2 cloves garlic, peeled and halved
  • 4 ripe tomatoes, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil leaves, thinly sliced plus extra for garnish
  • 8 ounces burrata cheese, at room temperature
  • 1 tablespoon balsamic glaze
  • Flaky sea salt for finishing


Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet. Brush both sides with 2 tablespoons olive oil. Toast for 8-10 minutes until golden and crisp. Rub each slice with cut garlic.
  2. In a medium bowl, combine diced tomatoes with remaining 1 tablespoon olive oil, salt, pepper, and sliced basil. Let sit for 10 minutes to release juices.
  3. Place a generous piece of burrata on each toasted baguette slice. Spoon tomato mixture over the burrata.
  4. Drizzle with balsamic glaze and sprinkle with flaky sea salt and extra basil leaves. Serve immediately.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon juice.
