Ingredients
- 1 loaf crusty bread (like ciabatta or baguette), sliced
- 2 large ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1 tablespoon balsamic vinegar
- Salt and black pepper to taste
- 8 ounces burrata cheese, drained
Instructions
- Preheat the oven to 400°F (200°C). Arrange the bread slices on a baking sheet, brush lightly with olive oil, and toast for 8-10 minutes until golden and crisp.
- In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, 2 tablespoons olive oil, and balsamic vinegar. Season with salt and pepper, then stir gently to mix.
- Place the toasted bread slices on a serving platter. Tear the burrata into pieces and divide evenly among the slices.
- Spoon the tomato-basil mixture over the burrata on each slice. Drizzle with additional olive oil if desired and serve immediately.
