Description

A rustic and elegant galette featuring creamy brie, tart cranberries, and crunchy toasted walnuts, all drizzled with a spicy hot honey. Perfect as an appetizer or a light main course.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 8 ounces brie, sliced
  • 1 cup fresh cranberries
  • 1/2 cup chopped walnuts, toasted
  • 2 tablespoons honey
  • 1/4 teaspoon red pepper flakes
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon fresh thyme leaves (optional)

Instructions

  1. In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water, tossing with a fork until dough forms a ball. Flatten into a disk, wrap in plastic, and refrigerate for 30 minutes.
  2. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  3. On a lightly floured surface, roll out dough to a 12-inch circle. Transfer to prepared baking sheet.
  4. Arrange brie slices in the center of the dough, leaving a 2-inch border. Sprinkle cranberries and walnuts over the brie. Drizzle with 1 tablespoon of honey.
  5. Fold the edges of the dough over the filling, pleating as needed. Brush the crust with beaten egg.
  6. Bake for 30-35 minutes, until the crust is golden and the filling is bubbly.
  7. While the galette bakes, make the hot honey: In a small bowl, combine remaining 1 tablespoon honey and red pepper flakes. Warm slightly in the microwave or on the stovetop.
  8. Remove galette from oven and drizzle with hot honey. Sprinkle with fresh thyme if desired. Let cool slightly before serving.

Notes

You can customize the seasonings to taste. Adjust the amount of red pepper flakes for more or less heat. Substitute walnuts with pecans if desired.
