Description
Classic homemade donuts filled with rich vanilla pastry cream and topped with a smooth chocolate glaze.
Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet active dry yeast
- 1/2 cup warm milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon salt
- Vegetable oil for frying
- 1 cup vanilla pastry cream (store-bought or homemade)
- 4 ounces semi-sweet chocolate, chopped
- 1/2 cup heavy cream
- 1 tablespoon light corn syrup
Instructions
- In a bowl, combine warm milk, sugar, and yeast; let sit for 5 minutes until foamy. Mix in eggs, melted butter, and salt. Gradually add flour until a soft dough forms. Knead on a floured surface for 5 minutes, then place in a greased bowl, cover, and let rise for 1 hour.
- Roll out dough to 1/2-inch thickness and cut into 3-inch rounds. Place on a baking sheet, cover, and let rise for 30 minutes. Heat oil in a deep pot to 350°F (175°C). Fry donuts for 1-2 minutes per side until golden. Drain on paper towels.
- Fill a piping bag with pastry cream and inject into the side of each cooled donut. For the glaze, heat heavy cream until simmering, pour over chocolate and corn syrup, and stir until smooth. Dip the top of each donut in the glaze, let set, and serve.
