Description
Delicate almond cookies with a sweet blueberry jam center, rolled in powdered sugar for a festive snowball effect. Perfect for holiday baking!
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for rolling
- 1 teaspoon almond extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup blueberry jam or preserves
- 1/2 cup finely chopped almonds (optional for coating)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in almond extract.
- Gradually add flour and salt, mixing until a soft dough forms.
- Take about 1 tablespoon of dough, flatten slightly, place 1/2 teaspoon blueberry jam in the center, and wrap dough around to seal. Roll into a ball.
- If using, roll balls in chopped almonds for extra crunch. Place on baking sheets 2 inches apart.
- Bake for 12-15 minutes until bottoms are lightly golden. Let cool on sheets for 5 minutes, then roll warm cookies in powdered sugar. Cool completely and roll again in sugar before serving.
