Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 cup blueberry jam or preserves
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and granulated sugar until light and fluffy. Beat in egg and vanilla.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into butter mixture until dough forms.
- In a small bowl, mix cream cheese and powdered sugar until smooth.
- Roll dough into 1-inch balls. Flatten each ball, place a small dollop of cream cheese mixture and a teaspoon of blueberry jam in the center, then fold dough over to seal and roll back into a ball.
- Place cookies on baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until edges are lightly golden. Cool on wire racks.
