Description

A sweet and satisfying twist on the classic quesadilla, filled with creamy ricotta, fresh blueberries, and a hint of cinnamon, perfect for a quick morning meal.


Ingredients

  • 4 large flour tortillas
  • 1 cup ricotta cheese
  • 1 cup fresh blueberries
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter (for cooking)
  • Optional: powdered sugar for dusting


Instructions

  1. In a bowl, mix ricotta cheese, honey, and cinnamon until well combined.
  2. Lay out two tortillas and spread the ricotta mixture evenly over each.
  3. Sprinkle blueberries evenly over the ricotta on both tortillas, then top with the remaining tortillas to form quesadillas.
  4. Heat butter in a large skillet over medium heat. Cook each quesadilla for 2-3 minutes per side, until golden brown and the filling is warm.
  5. Remove from skillet, slice into wedges, and dust with powdered sugar if desired. Serve immediately.
