A sweet and satisfying twist on the classic quesadilla, packed with fresh blueberries and creamy cheese, perfect for a quick morning meal.
Ingredients
- 2 large flour tortillas
- 1 cup fresh blueberries
- 1/2 cup cream cheese, softened
- 2 tablespoons honey
- 1/4 teaspoon cinnamon
- 1 tablespoon butter
- Optional: powdered sugar for dusting
Instructions
- In a small bowl, mix the cream cheese, honey, and cinnamon until smooth.
- Spread the cream cheese mixture evenly over one side of each tortilla.
- Sprinkle blueberries evenly over the cream cheese on one tortilla, then place the other tortilla on top, cream cheese side down.
- Melt butter in a skillet over medium heat. Cook the quesadilla for 2-3 minutes per side, until golden brown and the cheese is melted.
- Remove from skillet, let cool slightly, then slice into wedges. Dust with powdered sugar if desired and serve warm.
