Description
A delightful appetizer featuring creamy Brie wrapped in a crispy pistachio crust, topped with a tangy blackberry hot honey and finished with pomegranate arils for a burst of freshness and crunch.
Ingredients
- 1 sheet puff pastry, thawed
- 1 wheel Brie cheese (8 oz), cut into 16 small cubes
- 1/2 cup shelled pistachios, finely chopped
- 1/2 cup blackberries
- 1/4 cup honey
- 1-2 teaspoons red pepper flakes (to taste)
- 1/2 cup pomegranate arils
- 1 egg, beaten (for egg wash)
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small saucepan, combine blackberries, honey, and red pepper flakes. Cook over medium heat for 5-7 minutes, mashing berries slightly, until syrupy. Strain to remove seeds if desired. Set aside.
- Roll out puff pastry on a lightly floured surface. Cut into 16 small squares (about 2×2 inches each).
- Place a cube of Brie in the center of each pastry square. Top with a small pinch of chopped pistachios (reserve some for garnish).
- Fold the corners of the pastry over the Brie, pinching to seal. Brush each bite with beaten egg.
- Arrange bites on prepared baking sheet. Bake for 12-15 minutes until golden and puffed.
- Remove from oven and let cool 2 minutes. Drizzle each bite with blackberry hot honey, sprinkle with remaining pistachios and pomegranate arils. Serve warm.
