A refreshing and vibrant salad combining sweet blackberries, creamy avocado, and crunchy almonds, all dressed in a tangy honey lemon vinaigrette.
Ingredients
- 6 cups mixed greens (e.g., spinach, arugula)
- 1 cup fresh blackberries
- 1 ripe avocado, sliced
- 1/4 cup sliced almonds, toasted
- 1/4 cup crumbled feta cheese (optional)
- For the vinaigrette:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a small bowl or jar, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well emulsified. Set aside.
- Place mixed greens in a large salad bowl. Top with blackberries, sliced avocado, toasted almonds, and crumbled feta if using.
- Drizzle the honey lemon vinaigrette over the salad and gently toss to combine. Serve immediately.
Notes
You can customize the seasonings to taste. For a vegan version, omit feta cheese and use maple syrup instead of honey.
