Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3/4 cup shelled pistachios, finely ground
- 3 large eggs
- 1/2 cup whole milk
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1/4 cup crushed pistachios for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, cream together butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- In another bowl, whisk together flour, ground pistachios, baking powder, and salt. Gradually add to the butter mixture, alternating with milk, until just combined.
- Pour batter into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.
- For the frosting, whip heavy cream with powdered sugar until stiff peaks form. Spread over the cooled cake and garnish with crushed pistachios.
