Description

A vibrant and flavorful gratin featuring layers of earthy beets, sweet potatoes, and creamy feta cheese, topped with crunchy walnuts and a hint of Mediterranean herbs. Perfect as a side dish or a light vegetarian main.

Ingredients

  • 2 large beets, peeled and thinly sliced
  • 2 large sweet potatoes, peeled and thinly sliced
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped walnuts
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with olive oil.
  2. In a small bowl, mix olive oil, minced garlic, oregano, thyme, salt, and pepper.
  3. Arrange a layer of sweet potato slices in the bottom of the baking dish, overlapping slightly. Brush with the oil mixture.
  4. Add a layer of beet slices over the sweet potatoes, then sprinkle with some feta cheese and walnuts. Repeat layers, finishing with a layer of sweet potatoes on top.
  5. Pour vegetable broth over the gratin. Cover with foil and bake for 40 minutes.
