Description

A moist and flavorful banana cake studded with crunchy walnuts, topped with a creamy dreamy frosting. Perfect for using ripe bananas and satisfying your sweet tooth.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/2 cup sour cream
  • 1 cup chopped walnuts
  • For the Dream Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Mix in mashed bananas and sour cream until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Fold in chopped walnuts.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow cake to cool completely in the pan on a wire rack.
  9. For the frosting: In a large bowl, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
  10. Spread frosting over cooled cake and sprinkle with chopped walnuts.
  11. Cut into squares and serve. Store leftovers in the refrigerator.
