Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large ripe bananas, mashed
- 1/2 cup cream cheese, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter, sugar, and cream cheese until light and fluffy. Beat in mashed bananas, eggs, and vanilla extract.
- Gradually mix in the dry ingredients alternately with buttermilk, beginning and ending with the dry ingredients, until just combined.
- Divide batter evenly among cupcake liners, filling each about 2/3 full. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
