Description

A decadent cheesecake with a creamy banana filling, swirls of rich caramel, and a crunchy nut crust, perfect for special occasions.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup finely chopped walnuts or pecans
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large ripe bananas, mashed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1/2 cup chopped nuts (walnuts or pecans) for topping


Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, 1/2 cup chopped nuts, 1/4 cup sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then cool.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add mashed bananas, eggs, and vanilla, mixing until well combined. Pour filling over the cooled crust.
  3. Drizzle 1/2 cup caramel sauce over the filling and use a knife to swirl gently. Sprinkle 1/2 cup chopped nuts on top.
  4. Bake for 45-50 minutes until the center is set but slightly jiggly. Turn off the oven, crack the door, and let cool for 1 hour. Refrigerate for at least 4 hours or overnight. Serve drizzled with extra caramel.
