Description
This flank steak is marinated in a tangy balsamic mixture, seared to perfection, and topped with a savory blue cheese crust that melts over the meat for a rich, flavorful finish.
Ingredients
- 1 1/2 pounds flank steak
- 1/4 cup balsamic vinegar
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup crumbled blue cheese
- 2 tablespoons breadcrumbs
- 1 tablespoon fresh parsley, chopped
Instructions
- In a shallow dish, whisk together balsamic vinegar, olive oil, soy sauce, minced garlic, honey, dried rosemary, black pepper, and salt.
- Add the flank steak to the marinade, turning to coat. Cover and refrigerate for at least 2 hours or up to 8 hours.
- Preheat oven to 400°F (200°C) and place a cast-iron skillet or oven-safe pan over medium-high heat.
- Remove steak from marinade and discard excess. Pat steak dry with paper towels.
- Sear the steak in the hot skillet for 3-4 minutes per side until a brown crust forms, then transfer the skillet to the oven.
- In a small bowl, combine blue cheese, breadcrumbs, and parsley.
- Roast steak in the oven for 5-7 minutes (for medium-rare) or until desired doneness.
- Remove from oven and immediately press the blue cheese mixture onto the top of the steak. Let rest for 5 minutes.
- Slice against the grain and serve with the melted blue cheese crust on top.
Notes
You can customize the seasonings to taste. For a milder cheese, substitute gorgonzola or feta. Adjust marinating time based on your schedule.
