Description
A savory flank steak marinated in a tangy balsamic mixture, then topped with a rich blue cheese crust and broiled to perfection. This dish is a perfect balance of acidity and creamy, bold flavor.
Ingredients
- 1 1/2 pounds flank steak
- 1/2 cup balsamic vinegar
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1/2 cup blue cheese, crumbled
- 2 tablespoons panko breadcrumbs
- 1 tablespoon butter, softened
- 1 teaspoon fresh thyme leaves
Instructions
- In a resealable plastic bag, combine balsamic vinegar, soy sauce, olive oil, honey, garlic, rosemary, and black pepper. Add the flank steak, seal the bag, and marinate in the refrigerator for at least 2 hours or overnight.
- Preheat the broiler and place a rack about 6 inches below the heat source. Remove the steak from the marinade and pat dry. Discard the marinade.
- In a small bowl, mix blue cheese, panko, softened butter, and thyme until a paste forms.
- Place the steak on a broiler pan and broil for 5-7 minutes per side for medium-rare (adjust time according to desired doneness).
- Remove the steak from the broiler and allow it to rest for 5 minutes.
- Spread the blue cheese mixture evenly over the top of the steak, then return to the broiler for 1-2 minutes until the crust is golden and bubbly.
- Slice the steak against the grain and serve.
Notes
You can customize the seasonings to taste. For a more pronounced blue cheese flavor, use a stronger variety such as Gorgonzola. The steak can be grilled instead of broiled.
