Juicy chicken breasts are seared to perfection and simmered in a sweet-tangy balsamic glaze with fresh spinach and cherry tomatoes. This one-pan meal is quick, healthy, and bursting with flavor.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 3 cups fresh spinach
- 1/3 cup balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, reduce heat to medium. Add garlic and cook for 30 seconds until fragrant. Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Stir in balsamic vinegar, honey, and oregano. Bring to a simmer and let cook for 2 minutes until slightly thickened.
- Return chicken to the skillet. Add spinach and toss gently, letting the spinach wilt for 1-2 minutes.
- Serve chicken topped with the spinach-tomato mixture and drizzle with additional glaze. Garnish with fresh basil if desired.
Notes
You can customize the seasonings to taste. For a thicker glaze, let the sauce simmer longer. Substitute chicken thighs if preferred.
