Description

Juicy chicken breasts are seared to perfection and simmered in a sweet-tangy balsamic glaze with fresh spinach and cherry tomatoes. This one-pan meal is quick, healthy, and bursting with flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 3 cups fresh spinach
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and cook for 30 seconds until fragrant. Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
  4. Stir in balsamic vinegar, honey, and oregano. Bring to a simmer and let cook for 2 minutes until slightly thickened.
  5. Return chicken to the skillet. Add spinach and toss gently, letting the spinach wilt for 1-2 minutes.
  6. Serve chicken topped with the spinach-tomato mixture and drizzle with additional glaze. Garnish with fresh basil if desired.

Notes

You can customize the seasonings to taste. For a thicker glaze, let the sauce simmer longer. Substitute chicken thighs if preferred.
