Description

Juicy chicken breasts are seared to perfection and simmered in a rich balsamic glaze with fresh spinach and cherry tomatoes. This one-pan dish is both elegant and easy, making it a perfect weeknight dinner that feels special.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey or brown sugar
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 2 cups cherry tomatoes, halved
  • 5 oz fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Season chicken breasts with garlic powder, oregano, salt, and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through (internal temperature of 165°F). Remove chicken from skillet and set aside.
  2. Reduce heat to medium. Add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for 30 seconds until fragrant. Add balsamic vinegar, honey, and chicken broth. Stir and scrape up any browned bits from the skillet. Bring to a simmer and let cook for 2-3 minutes until slightly thickened.
  3. Return the chicken to the skillet. Add cherry tomatoes and spinach. Cover and cook for 2-3 minutes until spinach is wilted and tomatoes are slightly soft. Spoon sauce over chicken and vegetables. Serve immediately, garnished with Parmesan if desired.

Notes

You can customize the seasonings to taste. For a lower sugar version, use a sugar-free balsamic glaze and omit the honey. Serve with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
