Description
A quick and flavorful one-pan chicken dish with a tangy balsamic glaze, wilted spinach, and juicy cherry tomatoes. Perfect for a weeknight dinner.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cherry tomatoes, halved
- 3 cups fresh spinach
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, add garlic and cook for 30 seconds until fragrant.
- Stir in balsamic vinegar, honey, oregano, salt, and pepper. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
- Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Add spinach in batches, stirring until wilted.
- Return chicken to the skillet, spooning sauce over the top. Simmer for 2 minutes to heat through.
- Serve immediately, garnished with Parmesan cheese if desired.
Notes
You can customize the seasonings to taste. For a low-carb option, omit the honey or use a sugar substitute. Serve with rice, pasta, or crusty bread to soak up the sauce.
