Description

A quick and flavorful one-pan chicken dish with a tangy balsamic glaze, wilted spinach, and juicy cherry tomatoes. Perfect for a weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cherry tomatoes, halved
  • 3 cups fresh spinach
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Season chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, until golden and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add garlic and cook for 30 seconds until fragrant.
  4. Stir in balsamic vinegar, honey, oregano, salt, and pepper. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
  5. Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
  6. Add spinach in batches, stirring until wilted.
  7. Return chicken to the skillet, spooning sauce over the top. Simmer for 2 minutes to heat through.
  8. Serve immediately, garnished with Parmesan cheese if desired.

Notes

You can customize the seasonings to taste. For a low-carb option, omit the honey or use a sugar substitute. Serve with rice, pasta, or crusty bread to soak up the sauce.
