Description

All the cozy baklava flavors—pistachios, walnuts, cinnamon, and cardamom—baked into crisp cookies and sandwiched with a honey-orange cream filling.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped pistachios
  • 1/2 cup finely chopped walnuts
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • For the filling: 4 ounces cream cheese, softened
  • 1/4 cup honey
  • 1 teaspoon orange zest
  • 1/2 cup powdered sugar


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Mix in vanilla extract.
  3. In a separate bowl, whisk together flour, chopped pistachios, walnuts, cinnamon, cardamom, and salt. Gradually add to the butter mixture, mixing until a dough forms.
  4. Roll dough into 1-inch balls and place on prepared baking sheets. Flatten slightly with the bottom of a glass.
  5. Bake for 12-15 minutes, or until edges are lightly golden. Let cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  6. For the filling, beat cream cheese, honey, orange zest, and powdered sugar until smooth and creamy. Spread or pipe filling onto the flat side of half the cookies, then top with remaining cookies to form sandwiches.
