Description
A comforting and cheesy baked dish featuring tender zucchini slices layered with a creamy, seasoned cheese mixture and topped with golden breadcrumbs. Perfect as a side dish or a light vegetarian main.
Ingredients
- 4 medium zucchinis, sliced into 1/4-inch rounds
- 1 cup shredded sharp cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup panko breadcrumbs
- 2 tablespoons butter, melted
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, add the sliced zucchini and cook for 3-4 minutes, stirring occasionally, until slightly softened. Drain any excess liquid and set aside.
- In a medium bowl, combine cheddar cheese, Parmesan cheese, sour cream, mayonnaise, onion, garlic, oregano, salt, and pepper. Mix well.
- Add the cooked zucchini to the cheese mixture and gently fold until evenly coated.
- Transfer the mixture to the prepared baking dish and spread evenly.
- In a small bowl, mix the panko breadcrumbs with melted butter until well combined. Sprinkle over the zucchini mixture.
- Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
- Remove from oven and let rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
You can customize the seasonings to taste. Add a pinch of red pepper flakes for heat or substitute the cheddar with gruyere for a different flavor.
