Description

A comforting and cheesy baked dish featuring tender zucchini slices layered with a creamy, seasoned cheese mixture and topped with golden breadcrumbs. Perfect as a side dish or a light vegetarian main.


Ingredients

  • 4 medium zucchinis, sliced into 1/4-inch rounds
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add the sliced zucchini and cook for 3-4 minutes, stirring occasionally, until slightly softened. Drain any excess liquid and set aside.
  3. In a medium bowl, combine cheddar cheese, Parmesan cheese, sour cream, mayonnaise, onion, garlic, oregano, salt, and pepper. Mix well.
  4. Add the cooked zucchini to the cheese mixture and gently fold until evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread evenly.
  6. In a small bowl, mix the panko breadcrumbs with melted butter until well combined. Sprinkle over the zucchini mixture.
  7. Bake for 20-25 minutes, or until the topping is golden brown and the casserole is bubbly.
  8. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste. Add a pinch of red pepper flakes for heat or substitute the cheddar with gruyere for a different flavor.
