Description

These crispy baked quesadillas are packed with savory mushrooms, wilted spinach, and gooey melted cheese. Perfect for a quick weeknight dinner or a fun appetizer.


Ingredients

  • 8 small flour tortillas
  • 2 tablespoons olive oil
  • 8 oz mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 oz fresh spinach
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups shredded Monterey Jack cheese
  • Sour cream and salsa for serving (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and onion, cook until mushrooms are browned and onion is soft, about 5-7 minutes.
  3. Add garlic and cook for 1 minute until fragrant. Add spinach and cook until wilted. Stir in cumin, chili powder, salt, and pepper. Remove from heat.
  4. Place 4 tortillas on the baking sheet. Divide the spinach-mushroom mixture among them, spreading evenly. Sprinkle with shredded cheese and top with remaining tortillas.
  5. Lightly brush the top tortillas with a bit of olive oil (optional) or just press down. Bake for 10-12 minutes until tortillas are golden and cheese is melted.
  6. Remove from oven, let cool for a minute, then cut into wedges. Serve with sour cream and salsa if desired.

Notes

You can customize the seasonings to taste. Add a pinch of red pepper flakes for heat, or swap the cheese for pepper jack.
