Ingredients
- 4 ripe but firm pears (such as Bosc or Anjou), halved and cored
- 1 cup mixed berries (fresh or frozen)
- 1/4 cup honey
- 1/2 cup walnuts, roughly chopped
- 1/2 cup crumbled blue cheese
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Pinch of salt
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix melted butter, honey, vanilla extract, cinnamon, and salt.
- Place pear halves cut-side up in a baking dish. Brush the honey mixture generously over the pears.
- Bake for 25-30 minutes, until pears are tender and caramelized.
- During the last 10 minutes of baking, remove pears from oven and spoon berries into the cavities and around the pears. Return to oven to warm the berries.
- While pears bake, toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Set aside.
- Once pears are done, transfer to serving plates. Sprinkle with toasted walnuts and crumbled blue cheese.
