Ingredients

  • 4 (6-ounce) cod fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley
  • Lemon slices for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Pat cod fillets dry, brush with olive oil, and season both sides with salt and pepper.
  3. Place fillets in prepared baking dish. Bake for 12-15 minutes, until fish flakes easily with a fork.
  4. While cod bakes, melt butter in a small saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute.
  5. Stir in chicken broth, lemon juice, and lemon zest; bring to a gentle simmer. Cook 2 minutes.
  6. Remove sauce from heat. Stir in parsley. Taste and adjust seasoning.
  7. Pour warm butter sauce over baked cod fillets. Garnish with lemon slices and extra parsley. Serve immediately.

Notes

You can customize the seasonings to taste. For a richer sauce, add an extra tablespoon of butter. If cod is unavailable, halibut or tilapia work well.
