Ingredients
- 4 (6-ounce) cod fillets
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 cup low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon chopped fresh parsley
- Lemon slices for garnish
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
- Pat cod fillets dry, brush with olive oil, and season both sides with salt and pepper.
- Place fillets in prepared baking dish. Bake for 12-15 minutes, until fish flakes easily with a fork.
- While cod bakes, melt butter in a small saucepan over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Stir in chicken broth, lemon juice, and lemon zest; bring to a gentle simmer. Cook 2 minutes.
- Remove sauce from heat. Stir in parsley. Taste and adjust seasoning.
- Pour warm butter sauce over baked cod fillets. Garnish with lemon slices and extra parsley. Serve immediately.
Notes
You can customize the seasonings to taste. For a richer sauce, add an extra tablespoon of butter. If cod is unavailable, halibut or tilapia work well.
