Description

This tender, flaky cod is baked with fresh lemon and garlic, then topped with a rich, tangy butter sauce. An elegant yet easy weeknight dinner that’s ready in under 30 minutes.

Ingredients

  • 4 cod fillets (6 oz each)
  • 1/2 cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • Lemon slices, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat cod fillets dry and place in the baking dish. Season both sides with salt and pepper.
  3. In a small bowl, mix melted butter, garlic, lemon zest, and lemon juice.
  4. Pour the butter sauce over the cod fillets, ensuring they are well coated.
  5. Bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Remove from oven, sprinkle with fresh parsley, and serve with lemon slices.

Notes

You can customize the seasonings to taste. For extra flavor, add a pinch of red pepper flakes or a teaspoon of capers.
